I had a great meal, and was given a lovely table by the window this evening; but the windows do need to be cleaned, they were so dirty on the outside.

It has been many years since I've visited but it was a first for my wife. Hands down the best restaurant in Banff! Even with all the COVID issues going on, the service was impeccable! Best steak either of us have had in Alberta!
Already planned our return visit, and I think this may very well become a regular escape for us.
Only regret is I chickened out of ordering the Porterhouse or Tomahawk. This will not happen again LOL.

The skirt steak was well below expectations for the caliber of this restaurant.
The tartare and scallops were amazing! We had Randy as our server and he is extremly knowledgable on the drinks, wine and food they serve. We asked for suggestions and were blown away from the delicious food and drinks.
Food was wonderful, very tasty. We had scallops, oysters and steak and all were done perfectly. Ambiance is nice, nothing special other than it is in the Fairmont Banff Springs which is overall beautiful.
Highly recommend the Tomahawk steak and the Mac and Cheese. Best me and my wife have had.
It was a celebratory dinner for my son for his college graduation.

Menu concentrates on Wagyu Beef which in my opinion is over rated. I had the 15 oz Alberta Ribeye which was very well done. Ordered the bone marrow with it. The bone marrow was a big disappointment. They didn’t charge us but my question is, why did they serve it if it didn’t meet the chefs standards. The menu is limited, steaks jump from 7oz to 14oz, nothing in between. Be careful of the champagne cart, overpriced not worth it. This is a way over priced restaurant in a beautiful setting.
Absolutely delicious fish, beef, elk and vegetable sides. Amazing views.
Very busy. Service was sluggish even for iced tea. For the price I expected better quality meat. Ribeye a bit tough despite medium rare temp. Mac and cheese dry and lacked distinct cheesiness.
Only one caution, the current (2.2020) chef appears to love rich sauces and diced root vegetables - and for us the meal was over seasoned. Our server was terrific. Atmosphere is gorgeousness - it is spendy so be prepared but not to miss at the Fairmont in Banff Springs!
Beautiful space, but that's what you pay for. Wine was costed at more than 4 times retail which honestly is COMPLETELY ridiculous (actually, I would call it robbery)! We shared the Tomahawk steak which was good, but for $165 it should be amazing; note, they also didn't tell us it was sous-vide until after we asked the cooking method as it didn't seem to retain much moisture. Miso Mushrooms were pretty stellar, however there was still a good amount of grit (not sure if it was the miso or the mushrooms not being properly cleaned). Honestly, wouldn't go back and honestly, don't think they really care if I did.
Went for our anniversary.
The wagyu steak was the best I’ve ever had. 10/10 would recommend. Great sides, great drinks and Great service.

Reviews were read before booking and several of us were looking forward to the 50oz tomahawk steaks. We went with the 'chef's recommendation' to have them medium rare, rather than rare. They looked impressive on arrival at the table and Jeff set about cutting them for ease of consumption. He checked back with us after a few mouthfuls and all appeared well initially, but as we proceeded, the over-use of salt began to spoil the experience. We felt we were a little far into it to complain about it and started trying to scrape off the top layer. It did mar the overall experience, and this over-saltiness may have been a one off and not the norm, so I would say just look out for that at the outset ... and mention it if you feel it may become over-powering as you work your way through it.
The sides were good: root veg dauphinoise, mushroom miso, spinach and baked potato. Our fifth guest had the fillet steak and all was well. The homemade breads were also excellent - only slight slip was that servings for 4 were brought, instead of 5 and we couldn't rectify this in a timely fashion within the meal.
Starters were of good quality: steak tartare (exactly as you would expect), the Wagyu (excellent, although one piece of the five in the serving was very, very small and therefore a little overdone), scallops were delicious and crab cakes tasty - all dishes were cleared by us at every course, so there was little to officially complain about, but still feel the need to critique so others can be aware in advance. On this basis, it may be a bit over priced, when you can honestly say you have had better in a specialist steak chain restaurant with lesser reputations and price tags. But go for the ambience and great service - it was a good experience overall.
Steak were very good cooked to perfection. Service personal and good. Menu well rounded. A little expensive but worth a special occassion

I was really anticipating a great dining experience. But, the whole meal from drinks to entrees was mediocre. Martinis were small, watery with tiny little olives. We shared the iceberg wedge, but it was so small that we each should have gotten our own. Ribeye steaks and the carrots were delicious but the $19 baked potato was really boring. All of this for $400. The following night we had a meal far superior at Park Distillery that only cost $117. Don’t waste your money at the 1888 Chop House. It’s just not worth it!

We went there for my wife’s birthday 2 times in our 4 day vacation to Banff. Both times were excellent and will be back again. Definitely get what you pay for.

Our first night at the Fairmont was highlighted by our dinner at 1888 and our fantastic server Adam. He had an incredible depth of knowledge of all food and beverage on the menu. He was was polite, attentive and created a truly flawless experience for us. The food was top notch and I would highly recommend this to anyone visiting Banff.

This was our third trip to 1888. Obviously the first two visit must have been very good for us to return a third time.
This visit though was a huge disappointment. While the Service was amazing, the food was so salty we sent it back. When we received the "second" meal, there was so much salt on it, the crystals had not even melted yet. It seems the chef really enjoys salt. We sent this meal away as well and choose to simply finish our wine and go to another establishment for dinner. Very disappointing to say the least.

At our anniversary dinner we enjoyed the overall atmoshere of the resyaurant. Having dined at many upper class establishments throughout the US, this was not our first 'fancy' restaurant. Therefore we also had certain expectations of the delivery of the product. It was a surprise that the Cesar salad was overly salty, as well as the side of mushrooms, which we did not finish due to excess salt. The filet mignon & the Wagyu were very good and made to perfection. In summary, for the fancy nests level of the product advertised the place fell short in some basic appetizers & side dishes. Thus, only 4 stars.
