MESO MAYA’S kitchen is led by Nico Sanchez, the executive chef.Chef Nico’s love for the culinary arts started at age nine, when he worked for a bakery, making deliveries and assisting in the kitchen in Mexico. Nico honed his skills at several restaurants throughout the country, in states such as Vera Cruz, where he learned about seafood, dried chilies, and making sauces from scratch, and Oaxaca, where he perfected tamale-making techniques. In 1996 he left Mexico for DFW so he could pursue his goal of becoming a renowned chef. By traveling from state to state throughout Mexico, Chef Nico learned many of the culinary skills that patrons in the area enjoy every day. Chef Nico earned his reputation within the Dallas restaurant scene by working at Cuba Libre, The Porch, Hibiscus, and Meso Maya. His food is celebrated for its complexity, unique presentation, and fresh flavors (thanks, in part, to his love of gardening—he grows peppers, tomatoes, squash, and onions).

Youth are released from detention into the sheltered environment of Café Momentum’s post-release program. Café Momentum’s program teaches critical skills that allow youth to re-enter society in a safe, real-world environment of nurturing accountability. By participating in our program, at-risk young people rotate through every aspect of the restaurant from waiting tables to washing dishes, while working side-by-side with established chefs. It was our first time at The Keg and we had a wonderful experience. We were greeted by a very nice host and then our server Alan did a wonderful job of making sure we had all we needed. Next time we are back in the are we would love to come back.

Incredible layout and presentation! Very kind and friendly staff. My mother made the statement “I’d like to do this every year”. We loved the violinist, our table next to the windows, the custom flower arrangements, and Absolut Bloody Mary bar. The orange blossom mousse was my favorite! Thank you for making it so special for the mothers, especially mine! See you next year!
