Joule, the first restaurant from celebrated husband and wife cooking team Rachel Yang and Seif Chirchi, is re-located in October, 2012 to the innovative, newly developed the Fremont Collective in Seattle’s Wallingford/Fremont neighborhood. From its original opening in 2007, Joule has cultivated a loyal dining fan base and captured the attention of an admiring local and national media captivated by the couple’s unique, modern perspective on Korean cuisine. Joule, the mature sibling to Yang and Chirchi’s restaurant, Revel, highlights Korea’s love of beef featuring unconventional cuts accompanied by distinctive and shareable side dishes.

Joule takes reservations for 1.75-3 hour time slots (depending on party size). We do our best to accommodate as many guests as possible and ask that you are considerate of other diners at the end of your meal.     I had high hopes. I went to Revel years ago when I last visited Seattle. It was such a memorable experience that I wanted to try their sister restaurant for a nice night out. Unfortunately, the food was okay but for what they charged nothing wowed me. The only dish I can hype is the smoked tofu with mushroom. That was the only thing my husband and I enjoyed. We got the scallop poke (skip), "that" short rib steak, and octopus. The last two were okay but not amazing. Service was good and quick though!

    Service is casually sophisticated and top notch. Food is the main draw though - rice cakes never disappoint! The carrots with miso are out of this world. Lamb adobo is a super flavorful - needs some rice though :) Thanks for a terrific meal and experience!

    Loveddddd our meal and the ambiance of the restaurant. There was a moment when the stove or something was out in the kitchen causing a delay in our dishes. However, we were caught up in conversation and did not mind at all. To thank us, they provided us with a complimentary dish! So kind and unexpected. It was our friend’s late bday celebration and they still brought out a little cake for him. Great service, great staff, and the octopus and green goddess noodles are to die for! Need to return before they get removed from the menu.

    We love that food at Joule. That being said our service last night was despicable. We arrived at 6:15 pm and promptly ordered our food. It took over an hour for our main dishes to arrive and never got an apology from the waitress or an update of where our food was. Just an overall poor experience. We would have ordered more food if the dishes came quicker (which is usually the case at Joule) .

    We ate the short ribs, the rice cake bowl, the cake, and the poke salad. All were amazing! The Seoul Sun cocktail was also fantastic. Staff were so helpful and were able to rattle off every part of each dish that had my specific allergens and caught some dishes to stay away from that I would not have guessed from reading the menu. Vibes were supreme. 10/10 would recommend.

    The menu online was not the same as what they had at the restaurant. Very few vegetarian options and they weren't able to change the spice level on any dish so it made it even more restrictive. The food was okay, nothing great but on the way back home, my husband and I had stomach pain. Absolutely not worth what we paid for the meal.

    We have been traveling for two months and just returned. Joule was our first Seattle restaurant to revisit. The food was just outstanding as usual and we both agreed that we hadn't had any food on our travels that is so fresh, flavorful and creative. Joule is most favorite restaurant in Seattle - don't miss it.

    We just had the special Veganuary Sunday Supper and it was one of the best meals of my life. I'm vegan, but the three friends who came with me are not, and none of us had been to Joule before. It was an overall delightful experience. Manager Brandi spent a lot of time talking to us and checking in, chefs Cera and Carter told us about each course. I got the Oh Mai, Oh My! mocktail, and it really did taste like a mai tai. Was delicious, would get again. My friend got the mocktail pairings and was disappointed by half of them, but I think that was the only draw. Starter was eggplant unagi onigiri with black rice. I wish the eggplant had been super soft as it sometimes can be cooked, but the flavor was nice. Then housemade cashew cheese on toast, topped with crunchy chickpeas, mushroom, & preserved lemon chili crisp. One of the highlights of the meal for me! And I don't really like mushrooms! Light, balanced, flavorful, creamy. Then house-fermented kimchi pancake with mushroom bao. The mushroom inside looked like pulled about meat, was quite impressive. All the portions were QUITE large, which we were pleasantly surprised by for an expensive, multi-course meal. The green curry noodle bowl came out, with tofu katsu, and we were told that it was in a cilantro sauce, which was not on the menu. This was unfortunately, because one of my friends literally can't eat cilantro. I waved Brandi over and explained the situation, and she said she'd go figure something out with the kitchen. She brought my friend the spicy rice cake from the regular menu, but with mushrooms instead of chorizo, making it vegan. My friends were delighted! It was delicious--perfect crunch on the rice cakes, super flavorful. I enjoyed the green curry noodle bowl -- the tofu katsu was really juicy and the breading was delicious, and I'd never had collard greens pickled like that. I took most of them home though!     Service was warm & efficient (we had a 7:00 reservation & arrived early, but were seated immediately) we ordered 4 items to share plus dessert & each dish was delivered in a timely fashion. The food was so delicious! Miso cabbage & butternut squash salad, beef tartare, octopus, & mackerel. Oh yumm! I loved the piquant miso dressing, the tartare was a sassy tasty lil number, I don’t think I have ever had octopus cooked to such a tender state & the mackerel with the chimchurri & crispy skin was 😘 Dessert was awesome! Walnut cake 🤤 & the Joule box yum! I love a sweet’ish dessert. Drinks were awesome too! We will definitely come back!

    Everything was great except that it was quite loud - we all agreed our ears were ringing when we left. That was the only flaw in an otherwise wonderful experience. Food and service were excellent!

    Every single bite, every single sip was delicious. Great vibe - we sat on the heated patio right next to the fire pit and it was very comfortable. Amazing service - super friendly and attentive. I know I'll be returning specifically to have another of the Seoul Sun cocktails. Other stand out items were the scallion pancake, and the smoked tofu. so yummy! Would absolutely recommend.

    Other than parking being a challenge, our first visit to Joule will not be our last! Our server, Michael, was outstanding in introducing us to Joule's menu with suggestions on how to move forward. Our party of six ordered about 10-12 dishes which arrived at the table at 2 to 3 plates at a time. This allowed us plenty of time to taste, arrive at a consensus, and in many cases order repeat dishes during the evening that impressed us most. I believe the pancakes (?) were reordered 3 or 4 times as could not get enough:) As this was our first Korean food experience the majority of conversation was limited to the dishes, tastes and should we reorder (which we did several times). All in all, a great time had by all and cannot wait to visit again.

    We had a nice evening at Joule, however for what we paid for the tasting, I am shocked we sat at the bar where we did. It was very distracting all of the waiters coming in and out, right by our seat. The food was good, but not great, and some of the dishes were not warm. Overall, it is a nice, cute place and good experience but little pricey for the value.

    I had the course meal set for 2023 New Years Eve. Everything came out looking amazing. First bites were good. Salad was amazing. Burata and chili oil blended well. Celeriac wontons were awful. It was actually a misnomer for textureless tortellini. The dashi that was served with this was astounding tho. Scallop bibimbap was great, but the scallop-rice ratio was a bit lacking. Too much rice for 2 medium-small scallops. Wagyu steak was cooked to perfection. The sunchokes it came with were caramelized with a sugar glaze that was a bit too sweet, and some pieces were straight up burnt. Those were unpleasant. Dessert was a vanilla chestnut mousse (dome) with pear gelee in the center all on a hazelnut dacquoise. This was on the larger side. The texture of the mouse was very...thick. I think it is just difficult working with chestnut as the flavor often doesn't get to shine, and the texture is always...grainy and thick. The pear gelee was good, but the composition of these dome like desserts makes it difficult to get a bite with all the flavors together, balanced, as it is just a small brick of gelee in the center. Maybe better if the outer dome was just smaller. Treats at the end included pates de fruits and quince rugelach. Felt like no one taste tested the pates de fruits. These were more sour than a warhead and had no sweet center. Actually criminal that this was served. What a horrible way to end the meal. I think I focused more on the critiques rather than the positives, but I think theres more value in that. The things that were good were good and I would get them again.

    This is our favorite restaurant in the city! The food is delicious- every dish was exceptional. They make it easy for sharing . The servers are professional, helpful, so friendly and fun too!

    This was our first return to Joule post-pandemic. It's cozier than before (without the rear counter). The service was so kind and so competent. The food was a bit unremarkable (the tofu and poke salads, the beef ribs, the fishy mackerel) but excellent too (the spicy rice cakes and the dan dan noodles). The prices were, as usual, high.
