In showing this building some love, local businesswoman Shoes Simes has said that she hopes to help make her pub more food-led and family-friendly. In doing so she hopes to turn this local building of historical importance into an establishment for local families and friends to enjoy together. It all started 13 years ago when she first saw the building and she knew straight away that this was the pub for her and finally her dreams have come true, with a full refurbishment, this pub is now ready to be revealed to Eastbourne in all its glory. Once functioning as an old Moot Court, eventually turning into a restaurant in the 1970s, before it boomed as a pub trading as The Rainbow. It eventually changed to The Counting House and saw a new lease of life as the garden grew to be a popular haunt of all in old town. It was okay. I probably expected more as per previous feedback. I ordered the pad see ew but I didn’t find it as great as other thai restaurants I been to. It’s too cozy. But overall, it was a pleasant dining experience.

Always a good time had at Bill’s. A friendly team and pleasant environement. The food is always to a good standard and great coffee. If I was being picky and was looking for areas of improvement - the children’s size breakfast had no bacon which is a tad stingy. Also we sat under the double glazed atrium and the glass was covered in guano. This doesn’t make for pleasant viewing when eating. I do appreciate this is probably a challenge to keep clean given the location.

Food was served quickly, lovely and hot. Sadly they had run out of Sunday Roasts in the evening when we arrived but selection on menu was good. Great they serve food until 10pm. We joined in the pub quiz which was good fun too.
