Excellent food and attentive service. The snails in a pail was quite a surprise. Usually I only get 6 snails when I order escargot and swimming in butter. This order was about 15!snails, no butter, but swimming in a delicious broth. Would definitely return

The restaurant is delightful - small, charming, unexpectedly so because it's in a modest building. The staff was all friendly and the offerings quite extensive, and the prices quite reasonable for the Palm Beach area. My only issue was that because I am vegan, there are not many offerings available to me. No plates of roasted vegetables or greens and beans. They did have a broccoli rabe pasta with sausage, so I asked if they would take out the sausage and make it mostly greens with just a little pasta, but it came out with the standard mix of 2/3rds pasta and 1/3 broccoli rabe. It was delicious but not the proportion I was hoping for. I hope one day they will have a more innovative vegan menu, with vegan sausage or a plate of roasted vegetables.
Having eaten here on >10 prior evenings, we anticipated a very good--even excellent--experience. It was not to be.
We asked for a well-lit table, and our first table was tucked into an alcove that defied moving one's chair. We were moved to a not-well-lit table, and literally upon sitting down, the lighting in the entire restaurant was turned down. It was not a good start.
Cheese souffle was lumpy with unmelted cheese, dense, and without much flavor; I had had this souffle at this restaurant previously. (This was ultimately comp'd, which was a nice gesture.) Caesar salad was pedestrian. Marinated hanger steak was without much flavor, and while I expected it to be "firm," this was "tough." As a key lime pie fan, I was told it had been made that day. Maybe so, but freshly made key lime pie seldom has a soft, nearly soggy crust.
The service was very good, the wine we selected was as expected (very good), and a pleasant conversation with the folks at an adjacent table rescued the occasion as an evening out.
We have long said that only amateurs eat out on Sat. night, and we failed to follow our own advice.
Most importantly - we all agreed we would go back again.
Our first time at the restaurant. We wanted a quiet restaurant so we could talk to our friends and Maison Carlos was quiet enough for my friends who are hard of hearing! It is a small restaurant and all the tables do get filled so make a reservation.
We all thought our food was great - I had the branzino fish special, my friends had the veal which was very tender and my other friend had the duck. The portions are just the right size.
The crowd was mainly well to do seniors, probably because it is not a big loud restaurant and the food is more sophisticated and no bar scene.
The waiter had a fun personality and took care of our requests. The owner was present the whole time and checked on our table.
There is a convenient parking lot right next to the restaurant.

The fried zucchini was amazing. Clams casino good but small. Duck wasn’t good. Way too much orange and overcooked (we asked for medium rare). Pasta was decent but not hot. Server had too many tables.

This was our first time at Maison Carlos. It is a small restaurant -- with simple, but pretty décor, with about 12 tables -- but this lends itself to the perfect place to meet friends for dinner and to hold a conversation without having to yell. Overseeing seeing this is the owner, Carlos, with a waiter, captain, and bus person. This small staff is wonderfully capable of taking care of all 12 tables without overlooking a one. The zucchini chips that start the meal are superb-- light and salty. My wife and I had the fried duck breast and Attitude burger, while our friends had the shrimp paillard and fried duck breast -- all the dishes were perfectly prepared. The duck breast, though fried, retained its moisture.
I strongly recommend Maison Carlos -- whether for a casual dinner, or special occasion.
Warm, intimate atmosphere. Owner is present and involved. Food is good—not exotic but dependably good.
We all enjoyed out meals. The cheese soufflé was outstanding. Some of us ordered the pasta with sausage, others the veal piccata, duck and pasta bolognese. All dishes were excellent. The only item we didn't enjoy was the Cesear salad, which was very small. Both desserts, the flourless chocolate cake and the key lime pie were yummy.
We were VERY disappointed with the way that Carlos and our waiter handled an unfortunate incident with an appetizer. Not only was Carlos non-apologetic but the waiter said that it was removed from the bill when it wasn't, and it took Carlos to remove it with no other accommodation.
At least dessert should have been offered.
As always, our dinner was fabulous. The zucchini chips that every table gets upon arrival are terrific. The salmon was cooked perfectly, the veal piccata was delicious, the mahi-mahi was excellent, and the pasta carbonara was also terrific. We have been going to Maison Carlos for many years and have always had excellent food.
Carlos is a Wonderful host; he comes around to every table and is extremely personable.
