Cardinal is a relaxed fine dining restaurant from chef Tomás Gormley. Located in Edinburghs historic New Town Cardinal offers a modern approach to Scottish cooking.

With a wide range of local and sustainable suppliers at our doorstep, from our Lobsters and Crabs at Belhaven Lobsters in Dunbar to our vegetables and Native breed meats at Free Company Farm in Balerno we’re lucky to be taking advantage of Scotlands unique and unrivalled natural larder.

Cooking over coals helps add an extra layer of flavour to whatever we’re cooking on them, it’s more intuitive and engaging as cooks and we feel like that comes through on the plate.

Tasting menus are our bread and butter but we also offer a pre fixe three course.

The first three snacks come in relatively quick procession and feature flavours and textures that are exciting us right now. They're then followed by "five/six" courses that all have a story to tell and feature some of the best local and seasonal produce available to us right now.

    Wonderful service and incredible food! We had the full tasting menu, decided on ordering a bottle of red and white instead of doing the drink pairing which the staff was more than helpful assisting which our choices of wine. Thank you for a great experience Cardinal!!

    Wonderful restaurant situated in the Stockbridge area of Edinburgh. The food was excellent, building throughout the tasting menu, matched by the wine pairing. The restaurant was busy but still had a cosy feel to it - the only comment I would have is the music could do with being turned down a notch. The staff were excellent and had a definite sense of pride in their restaurant. Highly recommended.

    Lovely set lunch. Lamb cooked perfectly. Imaginative menu and great execution. The onlything we didn't like was the optional oyster. We felt the flavour of the oyster was lost in the granita. We ordered wine by the glass and the sommelier poured it without a measure. It was good wine but it felt like a mean portion. Other than that a very good meal at a good price

    An outstanding experience and some of the most brilliant food. Cardinal has striking dark decor, a warm, attentive, knowledgeable front of house team and quite clearly a very skilled kitchen team. All courses were absolutely exceptional and brilliant value for money. P.a. go for the cheese course... This place will certainly receive a star soon.

    Absolutely brilliant experience. We had the shorter tasting menu and loved every single course. The oyster and the dessert were both particularly exceptional. The service is first class and the chef deserves a Michelin star. One to watch for sure.

    This is my 2nd visit since Cardinal opened. I booked their 3 course tasting menu as a relaxed mid week get together for friends. We were blown away by the experience. Utterly amazing. We had the most relaxed enjoyable meal. Staff were incredibly helpful. Food was stunning. Before our starter we were served a beautiful onion soup with pine oil, followed by the most amazing brioche buns! We added the cheese course to our 3 course tasting menu. A very special evening. Thank you! 5*

    Fantastic, very personable, service, including from the chef and sommelier as to the food and drink. Food such an interesting mix of flavours and textures - really appreciated every forkful. Very glad we went for the wine pairing which was really interesting and appropriate and gave us experience of wines we'd never had before. Great value for a special meal out. Would definitely recommend.
