Eddie Merlot's Prime Aged Beef and Seafood starts with U.S.D.A. Prime Beef. Only 2% of all U.S. beef is awarded this superior certification. Eddie Merlot’s ages the beef naturally to an unparalleled standard of tenderness and flavor. The chef then personally selects each piece for the optimum proportion of marbling, and texture, before hand-cutting and seasoning the thick, tender, and juicy steaks to your specifications. To seal in the flavor, the steak is flash-sear on high-heat grills. Eddie Merlot’s has created one of the hottest concepts today; the wine bar provides more than 40 wines by the glass and a very extensive reserve wine collection by the bottle. The bar is stocked with all of the finest spirits and after dinner cordials and Cognacs. Eddie Merlot’s boasts a contemporary but stunningly elegant interior design and atmosphere—where guests can have fun, relax and enjoy listening to up-tempo music, while dressed in business or casual attire.

Meg was AMAZING. She really made our first experience one to remember. I also had my first bison filet mug on, and I’m pretty sure It was better than the $100 Waygu ribeye (which was also incredible). We Will definitely be back.

Bison steak was good, but not fantastic. Wife's NY Strip was overcooked and tasteless. The brussel sprouts were decent but lacked flavor as well. Au gratin potatoes were good and the pot sticker app was average.

The two mixed drinks we great and our waiter Bryce was fantastic.

Overall, the experience was just, Meh...

Can't say I'd go back, except maybe just to try dessert. Would not recommend this place to anyone as I feel like I could go to another place and get a similar tasting meal for half the price.

Planned dinner for our family of four at 6:30. The restaurant was not busy yet we were there for almost 3 hours with two kids. My husband and I both got sick , we are thinking from the calamari since it’s the only thing we both ate. The server was very nice but the service was so slow and like I said not busy at all. We waited twenty minutes for dessert and about an hour and a half for our food. They did give the dessert on the house because of th wait which was nice .

Food is excellent. Presentation is beautiful. Service staff needs formal training, given the quality of food and ambience. Our server was too quick to remove appetizers when we weren't even finished chewing them and have the last bite in our hands. Other than that, can't say enough about this restaurant.

Server was extremely loud; otherwise knowledgeable. However, ordered steak that was touted to be top US Prime and it was advertised as a "bone-in" steak. The steak was not a bone in and was cut in a very odd shape. It turned out to be very dry and tasteless. The broccoli side was tasteless as well. The oysters rockefeller were wonderful, however. Not worth the price, even though the menu looked very impressive.

Food and service was perfect. My family and I were hosting friends from out of town and we came here for dinner. This was a first time visit for all of us. Our server, Keith, was great. Good conversationalist with a good sense of humor. He checked up in us frequently, but not overbearing or intrusive. The coffee crusted filet was delicious. Overall, the evening was great. Highly recommend this place to anyone. We'll be back.

Immediately seated in a great booth where we could have a bit of privacy. Waiting for my clients, my server immediately established a great rapport and was very informative. We had cocktails and wine with our meal and the food was spot-on. Love this place.

Absolutely outstanding! Meals --- bone-in filet and salmon on wood plank --- were superb and desserts were beyond delicious --- carrot cake (their signature dessert) and cream brûlée. Tableside prepared desserts looked fantastic. Drinks were over the top!

My husband and I recently went for his birthday dinner... the service was excellent and the food was prepared well. The server made excellent recommendations on the menu, and was very pleasant and cordial. We were seated at a nice table in the back, and enjoyed the quieter atmosphere. We never had to wait long between courses, and the Manager, Matt, was circulating amongst the tables to ensure proper service. He was very knowledgeable about the extensive wine list, and was able to guide us towards a selection that paired very well with our meal. We opted for the Summer Menu, and the portions were a perfect size... we ordered an extra side of the creamed spinach which will now be a go-to when we eat there. For a cap to the meal, a very delicious creme brulee was brought to the table without prompting, and the piece de resistance was a birthday card given to my husband, which offered just the right personal touch. We have patronized Eddie Merlot's many times before and will continue to come back many more.

We were two couples and we really enjoyed our meals. Service was excellent and the food was too! It was Sunday, so there were selected wines 1/2 off list price, we took advantage of that and had a nice bottle of wine with our dinners. We will definitely return again soon.

The decor looks like an upscale Cheesecake Factory. The music was early 80s, which felt a bit weird to be honest. As we were seated, Debbie Gibson was loudly playing. My husband’s steak was supposed to be medium and although it came out pre-sliced it was rare at best. I had fish so I kept eating so it wouldn’t get cold as he waited for a replacement dish. This is known as a steak place. Not getting it right — after you slice the entire piece of filet — shouldn’t happen. It meant that we each awkwardly sat while the other ate on their own. It put a damper on the experience. Our waiter also removed all of our glasses by mistake so when he went to bring our wine and water he pulled them off of another table in front of us. He also came back to check our menu after he forgot which wine we ordered. It just seems like a lot of missteps for a meal that was that expensive. We will stick to eating in the bar at happy hour if we come back.

Great food, very good service. It is a nice establishment, and the prices certainly deserve a nice atmosphere, so it can be a bit disconcerting to see some patrons come in wearing inappropriate clothing (short-shots, flip flops, etc.).

We are never disappointed with the Eddie Merlot's at One Loudoun, particularly when we sit in Mark or Tim's sections. These two guys understand the formal dining environment and really add to the experience. When I get treated this well, I enjoy every bite of my meal and tend to make room for the great coffee and desserts.
