Open from Wednesday to Saturday for dinner and Thursday to Saturday lunch etch. offers a choice five, seven or nine-course monthly changing menus. Dishes are ingredient led and utilise quality produce from in and around the surrounding Sussex countryside.

Our second visit, with two friends who had not been before. We elected for the full taster menu which once again was an extremely enjoyable medley of different tastes and textures. The wine list was accompanied by a comprehensive description of each offering, making the choice of wine easy. Service was professional and personable without being 'stuffy' and the four of us were quite at home in our comfortable window 'booth' and at no time did we feel rushed. Not the least expensive evening I've ever enjoyed but this experience will never come cheaply. Cannot find any fault with Etch.
We really enjoyed Etch, the team were great fun and looked after us perfectly. We splashed out on 7 and 9 courses with wine flight. The sommelier was knowledgeable and the stories behind the wines were fascinating and matched the food courses perfectly. Exciting, delicate exquisite, fresh and mouth-watering. We left happy and giddy. Highly recommend if you're in the mood to splash out.
We had an amazing 7 course tasting menu during a lunch time sitting for out wedding anniversary. This was a beautiful menu with amazing cooking. The staff were attentive without making you feel uncomfortable. In fact they were all amazingly passionate and committed to you having a good time and understanding where the food came from and how it was produced.
We hope to be back soon. Why has it not got a michelin star yet?
A second visit and another stunning meal. We also enjoyed being challenged with the wine choices to match. Service has the right balance between friendliness and formality. We will be back!

Excellent food and wine, friendly staff - but 3.25 hours felt too long for dinner on a Friday night.
Myself and my partner visited etch on 12/07 for his birthday...fantastic professional service and outstanding food. I am 8 months pregnant and they managed to cater for me in such a way I didn’t feel awkward or that I’d caused a problem even though I probably had made it slightly more difficult. Wonderful experience and one that would be hard to beat elsewhere...many thanks
Fabulous food and wonderful service! Each and every dish was created with such care and expertise. It was great to be able to see the food being prepared - the kitchen ran seamlessly! Everyone was very friendly and knowledgeable - they went out of their way to make sure we were happy and comfortable. I would definitely recommend Etch to friends and family.

simply outstanding .. the 5-course was just the right amount.
Initially we were disappointed. Having booked 2 months in advance, specified no cheese for my wife's vegetarian meal, and having had a young lady phone me a couple of days before to confirm the details, when we arrived and wanted 1) a pre dinner drink - no Bailey's (felt like they were saying they were too posh for this), although the bar man did try to make an equivalent without success, and 2) we couldn't have the associated soft drink accompaniment with our meal as this had to be pre-ordered, despite the fact this is not mentioned on their website, nor did the young lady who confirmed the booking mention this either. This meant that we had to settle for the bar man trying to make some soft drinks off the cuff to accompany our food, again with rather mixed results and frankly too much liquid.
Little details irk and fail them as well. We were sold water when in fact they gave tap water if asked, but we weren't offered this. No tongs for the ice and no hanger for my wife's handbag, these only appearing half way through our meal. The servers need to be more aware and attentive to details.
The ambience is so so, nice decor but loud and brittle and with no romantic undertones. All rather functional, no luxury, comfort or little touches to justify the expense apart from the food, always just the food.
The food is undeniably great, and centre stage, and well served and presented, but a restaurant experience is an amalgam of many features, not just the food, and for this reason it is unlikely we will be going to Etch very often. However if you want want to experience great food in an unfussy way (but I am!) then Etch is the place for you.
There was not anything that we did not like on the menu and the drink pairings were interesting and great. Very friendly staff and Steven came over several times to serve and explain courses.
Fabulous food. Immaculate presentation. Intimate atmosphere.. I love the fact Steven still serves some of his food to you. Prestige wine flight is worth the extra, some superb wines, especially the Barbaresco and natural wine from US. However be prepared for a seriously expensive night. 2 people, 9 course tasting, one prestige wine flight, one normal, bill over £400!!! Ouch!
The beauty of food - if food had a model agency, this would be the number one to go to. Steven has honed his craft with passion, dedication and drive alongside an experienced and hard working team. The food was a sensory delight. A fantastic, enjoyable and memorable evening. Thank you!

A complete treat for a celebratory night out. We had the seven course tasting menu with wine pairing. Etch were very conscientious about allergies beforehand and adjusted the menu to suit. Service was impeccable. Can’t wait to go again.
What an amazon restaurant! We had the best night out, the whole thing from start to finish was perfect. The attention to detail as wonderful and the assortment of flavours is astonishing.
We had the 9 course taster menu with wine pairing. I don't drink red wine so my wine pairing was different to my husbands and that was no bother to them at all. It was so interesting hearing about where the wines are from, how they are made, the grape variety and why they had chosen them to go with a certain dish. The amount of effort that has gone into making this restaurant fantastic is literally mind blowing. The food is exquisite and we can't wait to go back. Thank you.
The 9-course tasting menu is an epic...and truly memorable experience. Steven makes sure every dish comes out perfect...and he and his team of friendly knowledgeable staff are very attentive. Highly recommend if you can afford.
Very inventive with combinations we had not heard of, wasn't a fan of pickled celery with my cheese and sorbet but it was fun to try. All other combinations were a hit! Service was excellent and the atmosphere was very relaxed. Limited selection of wines by the glass, but excellent and inventive cocktails. We shall be returning later in the year to enjoy their seasonally changing menu.
Without a shadow of a doubt, THE tastiest meal I’ve ever eaten. Unfortunately, it means my dippy eggs and soldiers will never be the same again.
Would absolutely recommend etch to friends, we had a fantastic evening and enjoyed every single course.
The service was outstanding and the staff were so friendly, they even made a fuss of me as we were celebrating my birthday!

Absolutely superb, from the moment we walked through the door to the point we had to pour ourselves in to a taxi at the end of the evening! Every course inspired and involving an arrangement of flavours that moves the dining from mere ‘food’ to an experience. One of THE best restaurants in the South-east outside of London!

We were giving a treat to family members who live in France and can be fairly sceptical about the standard of restaurants in the UK. Everything about Etch impressed them and us. The food is interesting, creative and delicious, and the service is attentive without being intrusive, just as it should be in a fine dining restaurant. The range of wine covers all tastes and preferences and is good value. IEtch has already become my first choice for any treat or occasion, especially as the tasting menus change each month to ensure the best possible use is made of local produce in season.
We had both the tasting menu and the vege equivalent. Food was fantastic and well worth the price tag. We didn't go for the wine pairings which would have doubled the bill, but just chose selectively from the wine menu.
Etch is my favourite fine dining restaurant in Brighton and Hove. However over the years we have been going the last year I have noticed a larger increase in the prices. So I do keep this for my special occasions
One of the best meals I’ve had in a very long time, fantastic food, and wine. Very informative and excellent service. I definitely would recommend to my friends.
My wife and I have dined in many fine restaurants in many countries but I have to say Steven Edwards did a great job with the combination of ingredients and flavours throughout the entire 9 course tasting menu. Just when you think it couldn't get any better it did and the finally of strawberries and clotted cream with outstanding. We will be back to enjoy more great food and service which was also top notch.
This was our second visit this year and certainly not our last. Firstly the service can not be faulted, very professional, welcoming and friendly just what you would hope for. Sommelier very knowledgable and rehearsed but not robotic. Food was just as good as we had on our first visit with a couple of signature dishes that did not disappoint. We chose the 9 course with wine pairing. The slight drawback on the pescatarian option was the course that had carrot which I would have happily skipped as I felt the dish needed a little enhancement to bring it to the high standard of the other courses. The fish and shellfish dishes were particularly special.
As we were the last ones to leave we had the option to choose the music whilst we paid the bill which we thought was a really nice touch.
In short, if you’re looking to be properly served with both high quality food and wine and spend a few £££ then Etch should be your go to

Definitely not your every day restaurant, Etch is something extra special with a fantastic, diverse menu and wine list. The team are creative, original and knowledgeable. We were particularly impressed with their wine pairings which introduced us to some excellent news wines that we would never have chosen ourselves. A wonderful experience for a special occasion.

Exquisite food and service. But I thought for a restaurant of this caliber the tables were placed too close like you’d expect in a typical pizzeria.
