Guests visiting The Pass can expect a culinary experience focusing on seasonality. Make your choice of tasting menus bursting with dishes of unique flavour combinations and ingredients before watching the creations of Head Chef, Ian Swainson unfold right in front of you.

Ian specialises in and only offers tasting menus: a number of small 'taster' dishes that complement each other to make a complete menu of various courses rather than a typical number of substantial dishes. The aim is to provide you with a fascinating journey of foods, flavours and textures that you might not ordinarily come across, giving you a dining experience, rather than just a meal.

    A lovely meal very creative menu - nice to be served by the chefs to. It was very quiet the night we went butvut meant we had chance to talk to the staff about the food, wine etc. Definitely worth a visit for a special occasion

    Amazing delicious beautiful creation for each of the courses of this imaginative tasting menu, definitely worth reserving a table before it becomes impossible! The service complimented the food and explanations were fantastic. We had a great lunchtime experience and hope to come back soon.

    The staff and the ambience in the restaurant are exceptional, but the food since Matt Gillam has left is too spicy and obliterates the flavour of the main 'star' of each dish. We will not be returning here.

    Fantastic restaurant with full view of the kitchens. We did the eight-course tasting menu and it was an amazing experience. Michelin star quality food with a bold, modern interpretation. The wine flight equally challenged perceptions, and my partner and I found ourselves discussing each dish and wine at length; such was the quality of the food and wine pairing. Thoroughly recommended.

    Great food, great service and a great sommelier. We had a wonderful time at The Pass, the dishes were really interesting as well as being delicious. The same goes for the wine flight which went to very imaginative lengths to complement the food.

    We had the 6 course tasting menu. Everyone was really attentive and took the time to ensure that everything was explained and our every need catered for. They adjusted the courses to cope with our allergies. It was a great experience being close to the pass and seeing the dishes being constructed before our eyes. We then had coffee on the terrace outside and it was a beautiful day with a fantastic view. It was extremely good value for the quality of food and the experience.

    Our second time at The Pass was just as enjoyable as the first back in 2012. We’ve recommended the restaurant to many friends over the years and were glad to see that it was as innovative and delicious as we’d remembered. Went for the 10 course taster menu, and the level of care and attention that went into each dish was obvious. Service was relaxed and friendly. Our guests loved the whole experience

    We came to celebrate my husband's birthday. It was an absolute delight from start to finish. The food is based around tasting menus. I had the vegetarian menu which was a revelation. My husband's menu was reportedly delicious and quite fish heavy, which is appropriate given the proximity to the coast. The dishes were beautifully presented and exciting in terms of their composition and flavour combinations. We loved that the chefs brought the dishes to us, giving us a chance to discuss how they had been made, the sourcing of the ingredients, and the inspiration behind each plate. The wine selection that accompanied the tasting menu was varied and interesting, using a selection of old and new world and different grapes and styles. We felt that this afforded particularly good value, and the sommeliers were enthusiastic and happy to discuss the wines in much detail. Which brings me on the exceptional service. Every single person was friendly and personable and the informal style of the restaurant, despite the fine dining style, was reflected in their manner. We thoroughly enjoyed our time at The Pass and would love to return. Highly recommended.

    Perfection!! It is rare that a tasting menu delivers on every single course - this did - and it just got better and better. You are sat in the 'pass' - between the kitchen and the rest of the hotel, and the space has been brilliantly designed so you can watch the chefs work - and not have it dominate the meal. The chefs introduce the dishes on the reasonably priced tasting menu, and we also went for the wine pairing (and a little english sparkling beforehand). IT WAS FAULTLESS. and the service was simply the best I have had in a restaurant for some time. The chefs took time to talk to us about the food they had prepared and were even happy to share recipes. Ian Swainson leads his team with charm and confidence. I can not recommend it enough and will soon return for another culinary delight.

    This was our third visit to The Pass restaurant and it did not disappoint. The food was delicious and beautifully presented. With each course one of the chefs chatted to us about the dish. The Lobster Thermidor was so good we nearly ordered a second helping!! A lovely experience - highly recommended.

    This was one of the best, most inventive menus I have ever had. It is up there with our experiences at Dinner and The Fat Duck. The chefs were passionate and informative about every dish and wonderfully engaging. The sommelier was equally impressive and the choices for the wine flight were absolutely superb. I cannot recommend The Pass enough. Why it doesn't have two (let alone one) Michelin stars is a complete mystery. Something I hope will be put right very soon.

    Thank you, thank you, thank you - dinner, art and theatre all in one! What an enjoyable experience, made all the more memorable by the friendliness of the staff and the way that they were all clearly enjoying themselves so much. I have marked 'ambience' as 4-stars - this isn't somewhere you would come for an intimate, quiet romantic meal. The lightning is bright, the energy is vibrant. Value I've marked as 3-stars. If you are simply looking for a quality meal, it is eye-wateringly expensive; but if you are here to experience being part of the drama, it is an amazing evening.

    We went for the 10 course taster menu with mixed responses. Tried each of the dishes but quite a few bits not nice. End dish of the artist paints were lovely though. Waited 15 mins for our table and then ages for the bill at the end. Have heard lots of nice things about the restaurant so I think we might head to the main restaurant next time.

    I have been to this restaurant a few times now, and it consistently gives me pleasure. It is a tasting menu of 6 or 8 courses, I suggest always going for 8 as you want the broadest picture. The chef is obviously mad about modern art, as each tiny plateful is an artistic masterpiece. My only criticism is that this time I felt that art overcame taste on 3 of the courses, which is a shame. I felt that the kimchi sponge was style over taste, it did look like coral on the plate, but foaming and then microwaving it to make the sponge did nothing for the flavour. The same applies to the pistachio sponge on one of the dessert plates. The finale is a wooden palate with various flavoured "paints" and popcorn paper to paint your own picture and then devour it. Genius if it had tasted good but it did not. The paper melted to glue in your mouth and the paints were just nasty tasting in hideous neon colours. Now this looks like a lot of negatives, but everything else was truly delicious and the staff were absolutely wonderful, charming to a fault. Do try this place as it is a really different experience and will give you lots of new and fantastic tastes.

    Great sophisticated tasting menu with unusual ingredients (fried moss, anyone? Slow cooked snails?) All dishes were a great composition in terms of taste, texture, and aesthetic. All tables overlook the kitchen, with those sitting with their backs to it able to check on proceedings on monitors mounted into the wall. The interior is modern, tables are high (almost like like a bar with bar stools). Traditional it is not, and maybe not romantic in a traditional way. Service is professional and flawless, but adaptive and informal. Chefs from the kitchen present and explain their dishes, which is fun (and useful)!

    We have visited the Pass a few years ago when we thought the experience was exceptional. On this occasion the food was not exceptional and all of the savoury dishes dishes were over seasoned so the true flavours did not show but rather a salty aftertaste. All in all a disappointing evening for the amount paid for the meal. Sorry but we were not impressed. Bring back the previous chef.

    Simply wonderful value for such works class food. Especially liked the Hawaiian salt, and the Reindeer moss from Finland !! Superb touch by the chef, coming out of the kitchen to serve some of the dishes personally and explain his creations to us

    Overall a good experience, but we did the wine flight and it was not worth the money. The wines were not really explained that well as to why they were chosen for a particular dish, the waiter was not really interested and so mumbled a lot. Portions of the wine were too small for the cost. Food is worth the money but not the wine. Choose a white and a red that you like and save yourself a few hundred quid!

    Came for our anniversary and had the 10 course tasting menu. Incredible food and great variety plus real attention to detail. You get a short explanation of each dish from one of the chefs and the way it's laid out you feel like you're almost sat in the kitchen and can see everything that's going on, which is cool. Would definitely recommend and although expensive, is probably a fair price for this standard of food.

    The pass always inspires with it's amazingly crafted food, hand picked wine and atmosphere. A Brilliant combination. I also stayed at the hotel this time and that added to the experience overall. Excellent friendly and knowledgeable staff.
