The Tasting menu is very much worth the extra few pounds. Every course brilliantly introduced and the range of ingredients used - superb. From Yorkshire Rhubarb to whipped buttermilk, guinea foul and more, Magnolia flowers and Jerusalem Artichoke. All presented beautifully , for taste and not just photographs!!

The food is beautiful, innovative and delicious. The tasting menu undoubtedly a triumph of simplicity (in terms of choice), seasonality and traceability / regionality. I like the intimacy and the hubbub of the place, given the small size and the tightly packed tables. I’ve always admired the wine list.

I’d have liked just a little more time given by the front of house staff (I quite like to be seated before I’m offered something!) to generate a slightly more relaxed feel. Granted the tasing menu is quite a thing to get through in 2 hours and needs a bit of pushing through. I’d have liked to relax just a tiny bit more though, to savour the moment and the wonderful food.

We had the tasting menu in this visit and it was great. It included some innovative and unexpected dishes and Jan never fails to deliver. We will be back soon.

We liked the wine carafe option, the warm welcome, chilled atmosphere, intriguing flavours/flavour combinations, heartfelt dish discussions and ingredient backstory reveals.
Thanks for a really great experience. We'll be back (and recommending) - missing the magnolia flowers in my diet!

Food quality is a very high level. Amazing flavours; the duck was divine! Service was great; attentive, accommodating and knowledgeable. Atmosphere and decor lovely. Obviously the price is right up there but in line with quality but I can’t give 5 stars because we didn’t leave full! portion sizes were a bit small to be honest. We had 2 rounds of delicious bread and fantastic little chefs tasters as well as starters and mains but could have done with more carbs! I feel bad leaving any negative comments for a lovely lunch experience but when you pay top dollar you do expect to leave full! Thanks for a lovely tasting lunch though guys!

The menu has three dishes for each course. Each dish was incredibly well thought out and absolutely delicious. Jan and his staff really enthusiastically talked us through every dish as it arrived and told us where the produce was from. We had a really lovely evening and I would highly recommend Wilsons to all. Thanks for a great evening!

This restaurant gave me one of the most fantastic dining experiences I have ever had. The flavours of the food were incredible. Many different things combined is such an interesting way. The service and ambience were that of being at a fabulous dinner party of a best friend. Each dish and each bottle of wine were served with such enthusiasm and passion - and knowledge - that it would be almost impossible to not enjoy it. I wholeheartedly recommend this restaurant to everyone living in Bristol and would suggest visiting just for the experience.

The food is very light, which is great for a lunch, but may not be suitable for all. The fish dish, was just fish served in a nice sauce, but nothing else. The starter of mackerel and an oyster in broth was okay, but not amazing - broth was delicious, but wasn't a huge fan of the dish. The star of the show was the desert souffle, which was fantastic. Service was very friendly, but almost a bit over friendly and enthusiastic. I'm all for friendly, polite service, but going to far can make your diners feel a bit uncomfortable. Overall I liked Wilsons, but didn't love it. Comparatively speaking - if you compare food to somewhere like Tare, which is the same kind of price I feel quality of food at Tare was superior. Not saying they are the same places, just comparing restaurants that are fairly similar. Again if you compare the wine to that of somewhere like Bells Diner - wine at Bells Diner was far superior to this for the price.

First time at Wilson’s and we’ll definitely be back. A great, relaxed atmosphere, super food that was really interesting and well thought out.

Lovely ambience, chef and floor staff work hard to please, question whether it's too much with repeated questions around have you ordered, are you finished when all that should be communicated amongst the team. Dishes come out very quickly after each other, maybe too soon ?! Main portions whilst delicious, are not on all cases exactly value for the portion size (noticed by tables nearby too). Food is sublime and undoubtedly of high standard in flavours and ingredients.

Inventive, sophisticated cooking, with an emphasis on local, often foraged ingredients, like morels. Portions a bit dinky but vibrant flavour combinations. Lively atmosphere and confidently informal.

Absolutely fantastic. You can taste the passion that they have in their ingredients. All the staff were absolutely lovely and made us feel very welcome. A really special dinner, we'll be back!

We went to Wilson for our anniversary, and absolutely loved our first ever visit there. Very friendly and accommodating service. Delicious food - we didn’t go for a tasting menue but the dishes we chose were full of flavour and texture. You also get a few preliminary dishes on house. They treated us to a free glass of champagne as it was our anniversary - thank you the team for the food and service! We’ll be coming back!

Wilson´s is all about serving the best fresh seasonal food from the region, the appropriate drinks and wines to go with it, and most importantly, being passionate about what you do and having fun while doing it. Kudos to Jan for doing what he wants and loves with such a purpose, it is contagious.
Looking forward to our next visit!

We had a wonderful meal. Began with very fine amuse bouche of soft wild mushroom mousse in a choux pastry bun, and a little cup of deer consommé (nice change from the ubiquitous velouté). Followed by a vegetarian dish of Jerusalem artichoke, dressed with crispy skins and a soft boiled egg yolk for one of us, and a great langoustine raviolo for the other - perfect, light pasta and delicious shellfish filling. Roe deer to follow has been shot and butchered by the chef and was perfect, with a herby sausage made of the offal and crisp mustard greens. Rhubarb soufflé to close was of a Michel Roux standard. Excellent short wine list, big on natural wines with modest mark-ups. As good as anywhere in Bristol for food in this idiom. Which means as good as anywhere in the country.

One of the best meals we've had in Bristol. Your amuse-bouche were outstanding, with a subtle combination of flavours, particularly the intense prawn bisque. The roe deer and its accompaniments were memorable. We look forward to returning.

Relaxed, refined, informal, sophisticated but unpretentious cooking. Seasonal local ingredients cooked with a skill giving a flavour experience you very rarely find for this price. Down to earth relaxed front of house and chef presents the food. First class lunch of a quality which is extremely hard to find. Thank you very much

We were brilliantly looked after from our arrival and had the wonderful tasting menu. Each dish was presented with passion but without fanfare and the wine recommendations to accompany the food were spot on. A fantastic evening. We'll be back!

Outstanding food with superb service . We enjoyed the lunchtime the tasting menu which was well balanced with just the right portions for a seven course menu which didn't leave us bloated nor feeling hungry .The chef/owner regularly related to the diners. A very good well balanced wine list . Service just the right balance between efficient and pleasantly informal . If you appreciate excellent food in simple surroundings with no sign of pretentiousness this has to be the place for you to visit !We certainly will travel here again from the 'wilds of Wiltshire'.
In our opinion one of the top three eateries we've experienced in Bristol !!

Very welcoming from the moment we walked in the door. The staff made us comfortable & were very knowledgeable regarding the menu,explaining ingredients with passion.
There were only 3 options for each course,but that’s a good thing.
The Yorkshire rhubarb soufflé was probably the most amazing dessert I have ever had!
Thoroughly recommend this restaurant,great buzz,great food,great staff.
Will definitely return.

Very good quality food including perfectly cooked venison and a superb souffle. And there were some lovely delicate flavours. Service was also good. However the portions were small, significantly smaller than I'm used to at similar quality restaurants and so much so that the person I was with, who normally finds two courses enough, felt she needed a pudding not because she really wanted one, but because she was still hungry. My starter was just one stuffed ravioli, lovely though it was. Her main course was small, as was mine. And the meal was poor value, probably 25% more than I've been paying for similar quality food at other good restaurants in Bristol. I will not be going back and would not recommend Wilsons to you (unless you're a successful hedge fund manager)
