The most incredible evening. We had an early table so the chef so kindly presented some of the food himself. Will absolutely be returning. Thanks so much for a perfect evening.
Wilson's is a truly lovely place to come and eat. We were met with a friendly welcome from the helpful staff. All of the dishes were simple, exquisitely presented and utterly delicious with vegetables full of flavour rightfully dominating the vegetarian choices. My rhubarb souffle was wonderful. It's a real family business: the chef/owner popped out to help serve and clear; apparently even the gorgeous flower arrangement on the bar was made by his wife with flowers she grows in her polytunnel. We had a lovely, relaxed and happy lunch. Thank you.
Eating at Wilson's makes me very happy. This was my girlfriend and I's second visit from Cardiff and we had high expectations after our first. The unpretentious, cosy setting is relaxed and welcoming. The dining area is not overly decorated and touches like the bouquet of wildflowers on the bar above our table added character.
Our attentive waiter made us feel very welcome and was happy to recommend wines to match our food. We started with a natural prosecco that was delicious (I usually don't like sparkling wine). The other wines we drank throughout the meal were interesting, delicious and well paired to our food.
We opted for the tasting menu and we began with with a number of canapes and amuse bouches in quick succession, all of which were delicious. Highlights were the mushroom custard tart which was an intensely savoury mouthful and buttermilk fried rabbit with a tarragon emulsion that had me wiping the plate clean with my finger.
As I write this, I could go on and on about each dish but I will limit myself to the very best bits.
Isle of Wight tomatoes, straciatella with a tomato and rose consomme was amazing. I have never tasted tomatoes so good and the addition of rose flavour to the consomme was new to me and it was delicious.
Barely-cooked slices of courgette with a citrussy sauce of spider crab meat was fantastic.
The sea urchin veloute that accompanied our steamed cod and turnip was incredibly deeply flavoured and rich.
A pre-desert of pink peppercorn lemonade and mint granite was a sharp and exciting palate cleanser.
I will definitely be going back to Wilson's and I hope that the chef and his team that produce this wonderful food continue to do so long into the future. Thank you all.
Tasting menu was excellent - my only complaint is that the two “mains” on the tasting menu were quite large portion wise considering it was a tasting menu! Anyway, I will definitely be back.
In a very unassuming location with the most simple decor, you are greeted by a friendly front of house team who immediately make you feel welcome.
From the short menu and extensive wine list we had a fantastic meal full of subtle and beautifully combined ingredients.

We were blown away by the whole experience. We had the tasting menu which was sublime. The attention to detail was wonderful and the service was friendly and well orchestrated. This was a celebration meal and we and our guests had an amazing experience.
Going to celebrate my Mothers 90th Birthday the whole team at Wilsons delivered a great experience. We visited on a Saturday lunchtime and enjoyed every aspect but the highlight is the food - Creative, seasonal and delicious. Highlight were the Artichoke and slow cooked egg, Squid & Tomato with a clear tomato consume as well as the Halibut and sea urchin. An excellent couple of wines accompanied the meal and all at a very reasonable price. Will definitely return.
Best meal I’ve had in Bristol. We went for the tasting menu, which isn’t cheap but well worth it. Would definitely recommend and will have it again.
The staff and owner are great, talk you through your order and will pair wine with the meal as well.

I always think that having the Chef Owner welcoming you upon arrival is always a treat. We had the taster menu and it was delicious. I can't recall a time I've had food that good in Bristol. Considering the simplicity of the restaurant's interior, there was an atmosphere. Overall we really enjoyed out meal, so thank you.
A wonderful evening. The taster menu offers exceptional value and the food is out of this world. Excellent wine list. After eating at Wilson's there is no point going anywhere else as the numerous courses will take you on an unforgettable culinary journey to paradise.
Outstanding food - especially the vegetarian options, which were the best dishes of the night even for the non-vegetarian among us!), flawless friendly but efficient service, great wine.... can't fault Wilson's in any way. Oh, and the mushroom amuse-bouche? Stunning!!! Great job and thanks to all.
Another delicious meal and wonderful eating experience. We had the tasting menu and it was a delight. A few extras thrown in such as canapés to start and a pre-desert which is always good. Very friendly and accommodating staff. They were happy to swap the desert for me as I wanted the cheese. Definitely recommend! Only consideration is that it is quite expensive so prefer to come for special occasions.
The food could not really be faulted. Well done! The one thing which needs to be more effortlessly professional is the service. A good waiter knows exactly what is the right time to leave between courses and here it was rather hit and miss and gave the impression of not being seen as a priority. Actually it is very important and makes all the difference between a perfect evening and one which leaves behind a slight feeling of resentment.
Wilson's is without question a must visit destination and is in my view the best restaurant in Bristol. The food is absolutely outstanding, with chef and owner Jan a charming and funny host. I can't recommend this restaurant highly enough.

The set menu is amazing and they gave some palette cleansers Inbetween. Service was attentive and had plenty of personality.
Wonderful, seasonal food prepared from local ingredients. We try to go at least once a year and Wilson's never fails to impress.
We were visiting Bristol and chose this restaurant based on recommendations by the BBC and the Guardian. We were pretty disappointed. The menu is very limited to begin with so if you have any special dietary requirements you are left with not much choice. I had a Jerusalem artichoke starter that tasted nice but was too big and rich to start a meal. My husband’s cuttlefish in broth looked pretty but was bland and unseasoned. What killed me was a main of steamed asparagus with a dollop of hollandaise and a couple of mushrooms and undressed leaves for £19! This is a shocking price by any standard. I live in London and am straining to think of anywhere that would try to charge that price for something so completely dull. The chocolate torte for dessert was ok but too rich when combined with the overwhelming starter. My husband’s chair was seated on a loose floorboard so every time someone walked by he bounced, which was pretty much the whole meal. Overall the whole experience was embarrassingly pretentious.
Wilsons is our favourite restaurant in Bristol. Always welcoming with a relaxed neighbourhood restaurant feel.
The food is obviously the highlight. The ever changing menu always presents a pleasurable agony of indecision. Unable to choose between the squab pigeon and the hake with sea urchin we did the sensible thing and opted for the tasting menu. And we got:

I’ve eaten in some incredible places and this was one of the best meals I have ever had, particularly when it comes to tasting menus. Every detail on the plate added something and was clearly really well thought out. There were ingredients I’d never tried before (magnolia bud jelly!!!) along with full explanations and enthusiastic detail from both the waiter and the head chef. The restaurant has a classy but relaxed feel, totally welcoming as soon as you walk in, with none of the stuffy over-formality you often get in fine dining restaurants. It was like eating dinner at the house of a (ridiculously talented) friend. I will definitely be back and bringing along lots of friends who I know will love it. I’d also recommend the more relaxed atmosphere of lunch service.

Anniversary dinner with my girlfriend - chose the best food in Bristol and the best tasting menu I’ve ever had. Fantastic wine. Coming back for sure. Definitely choose the tasting menu, you’ll regret it if you don’t.

The Tasting menu is very much worth the extra few pounds. Every course brilliantly introduced and the range of ingredients used - superb. From Yorkshire Rhubarb to whipped buttermilk, guinea foul and more, Magnolia flowers and Jerusalem Artichoke. All presented beautifully , for taste and not just photographs!!
The food is beautiful, innovative and delicious. The tasting menu undoubtedly a triumph of simplicity (in terms of choice), seasonality and traceability / regionality. I like the intimacy and the hubbub of the place, given the small size and the tightly packed tables. I’ve always admired the wine list.
I’d have liked just a little more time given by the front of house staff (I quite like to be seated before I’m offered something!) to generate a slightly more relaxed feel. Granted the tasing menu is quite a thing to get through in 2 hours and needs a bit of pushing through. I’d have liked to relax just a tiny bit more though, to savour the moment and the wonderful food.
We had the tasting menu in this visit and it was great. It included some innovative and unexpected dishes and Jan never fails to deliver. We will be back soon.

Food quality is a very high level. Amazing flavours; the duck was divine! Service was great; attentive, accommodating and knowledgeable. Atmosphere and decor lovely. Obviously the price is right up there but in line with quality but I can’t give 5 stars because we didn’t leave full! portion sizes were a bit small to be honest. We had 2 rounds of delicious bread and fantastic little chefs tasters as well as starters and mains but could have done with more carbs! I feel bad leaving any negative comments for a lovely lunch experience but when you pay top dollar you do expect to leave full! Thanks for a lovely tasting lunch though guys!
Mouthful by mouthful our delight grew. Four days later, my mouth still sings with tasting joy.
The menu has three dishes for each course. Each dish was incredibly well thought out and absolutely delicious. Jan and his staff really enthusiastically talked us through every dish as it arrived and told us where the produce was from. We had a really lovely evening and I would highly recommend Wilsons to all. Thanks for a great evening!

This restaurant gave me one of the most fantastic dining experiences I have ever had. The flavours of the food were incredible. Many different things combined is such an interesting way. The service and ambience were that of being at a fabulous dinner party of a best friend. Each dish and each bottle of wine were served with such enthusiasm and passion - and knowledge - that it would be almost impossible to not enjoy it. I wholeheartedly recommend this restaurant to everyone living in Bristol and would suggest visiting just for the experience.
