We do believe, best shoes are to be worn, money is to be spent, bottles are to be opened, liquid to be drunk. We also believe there is a dram for everyone and for every occasion. Each of us are unique, but we like to meet and drink on similar grounds, hence our list branches into four categories. Daily Drams - your daily choices. Your favourite pair of slippers, that kind, where you do not even notice anymore you have them on, but you would feel naked without them. Smart Casuals - a unique selection defining your style, who you are, how you like to be seen. Classy, but with no pretence. Business Attire - there are moments, where you dress to impress, run for a win, shoot to kill. Satisfaction guaranteed. Occasional Evening-Ware - some things are only once in a lifetime, so good, that once is just enough. Tasting notes and flavour profiles can be very subjective and misleading, hence we kept things simple - down to two descriptors: Wood Influence - because age is just a number, and whisky in certain climates age somewhat quicker than in others. Smoke - since you can make smoky whisky everywhere in the world - we put the warning signs for you. Or invitation - if you like things pretty peaty

The Influence of Wood on Whisky

Most characteristics and flavors of whisky are picked up from the wooden casks that it spends its life maturing in. Selected for its toughness, wood plays a crucial role in the development of malt whisky, with its porous qualities that allow oxygen in and out of the cask as well as allowing the whisky to absorb its flavors. The wood tight grain structures prevent leaking and reduce the amount of angel share. Wood naturally is full of occurring oils called 'vanillin' that are drawn out of the cask by the spirit and over the maturation period they add to the whisky's flavour appeal

• European Oak (Quercus Robur)

  European oak, most commonly from France, Spain and northern Portugal is mostly made into casks for wine, cognac, sherry or port and are usually used for final secondary period of ageing (known as finishing). Key Notes: Sherry - Dried Fruits – Sultanas – Candied Peel – Spices - Cinnamon - Nutmeg - Wood – Caramel - Orange – Christmas Cake

• American Oak (Quercus Alba)

  Preferred trees grow in colder regions as the oak grows more slowly so consequently have a tighter grain. American oak has high levels of vanillin and imparts a lighter colour to spirits than European oak. Usually seasoned with bourbon. Key Notes: Vanilla – Honey - Nuts – Coconut – Almond – Hazelnut- Butterscotch - Fudge – Spices – Ginger

• Japanese Oak (Quercus Mongolica)

  Also known as Mizunara oak, Japanese oak has extremely high level of vanillin but is a soft, very porous wood so casks made from Japanese oak are liable to leakage therefore are mainly used to finish whiskies. Key Notes: Vanilla – Honey – Flora – Blossom – Fresh Fruit - Apple - Pear – Spices- Nutmeg - Cloves
