He has a broad range of experience having worked in Michelin Star restaurants such as Fischer’s Restaurant in Baslow, The French Laundry in California, Tom Aikens Restaurant in London and worked with Thomas Keller at Harrods. and is able to adapt to the requirements of the guest and the occasion.

Food was very nice, service was excellent. Very enjoyable meal.
The lunch menu, because of Covid, was the bar menu. It is advertised on the website nevertheless we thought it somewhat ho hum. For me the quality of the ploughman’s was not really up to scratch, far too many gherkins and silver skin onions. No flavour in the scotch egg.

Lunchtime bar menu limited but we chose four different options which were all thoroughly enjoyed. All the staff were pleasant and attentive.
A cheerful service from helpful young staff with a nice ambience in a historic building. However, the food, though fairly generous in portion size, did not really measure up to the setting or the price. The pork terrine was too hefty without a tangy sauce or chutney and came with an indifferent salad and dry overdone toast. The sea bass was too salty on a stodgy risotto base (overwhelmed the fish) and I'm unsure about choosing cashews with it. Big portion of extra veg but too al dente. I think a little more thought needed on food combinations and flavours. Also the wine list was confusing to sort out whites from reds for a decent glass. I didn't go for pudding but the peppermint tea and petits fours were nice!
Thank you for your review. The Wine List is differentiated by the Country / Region from which the wine is sourced. Each of the wines has a description of the flavours . All of our Restaurant staff would have been able to help you with your wine choices to obtain a "decent glass". Food as ever is a matter of taste.
Really nice food- You have to order off set menu in restaurant. Everything very tasty. Service good, staff friendly. Just fell down a little when get to getting the bill - we just went and paid at the till on way out. Only thing - lacked atmosphere, as a few tables had lone diners, so just was not any noise in there at all!
Excellent all round as always, drinks outside in the sunshine before lunch perfect 👌

Excellent food - “only” serving bar menu at lunchtime when we went, but it was still incredible and easily the best pub food we’ve ever had. The decor and atmosphere is amazing!

The meal was good as expected and staff courteous but we were disappointed not to be in the main dining room as we booked weeks before so didn't really feel the Mermaid ambience that's advertised probably due to Covid restrictions but felt a little like the poor relations. Don't think we would not return as many other excellent places to eat.

Very pleasant lunch - we had the fish and chips and i have to say that the fish was about as good as it gets in terms of freshness and flavour. Amazing ambiance and the staff could not do enough to help us.
Our experience was perfect from arrival to leaving. We were met with a warm welcome and received brilliant service even though we had a late evening sitting. Nothing was too much trouble.
The surroundings were charming and the drinks menu impressive. Our food was exceptional and arrived hot.
If more than five stars could have been given, I would have definitely given more. A wonderful evening.
Most relaxing evening. My sea bass dinner was the most delicious I have tasted in a long time, quite unique flavours. The staff were very attentive and service excellent. Can highly recommend.
Ambience brilliant lunch menu basic needed more variety
Thank you for your review. The Mermaid is a unique building, rebuilt in 1420. We share your frustration with the menu, but the Covid Guidelines to which we strictly adhere to, severely limit the scope and nature of our menu.

Fish portions could be bigger Chips no better than McDonalds. Lunch menu very limited
Food very good and overall good value. The staff were friendly and helpful but some of the staff on our visit were obviously inexperienced but again they tried hard and were very polite. I would certainly go again and would recommend the restaurant to friends and family.
Some of the most delirious food we've eaten in a hotel. Well worth the money. The service was excellent in these trying times, the staff were incredibly hard working and pleasant.
The Mermaid required us to wear face masks when walking around the building, but not while at the table. All the staff either wore face masks or plastic face shields - this made us feel very safe and was much appreciated.
The food was delicious - we both had the fish and chips which was cooked to perfection. The service from all the staff was perfect and polite.
Thank you to all at the Mermaid for making us feel so welcome in these strange days.

Super all around - in particular, an extremely beautiful and historic building. On the inside, one of the best looking pubs on the inside.
A wonderful experience, lovely historic building with beautiful dining rooms and bar areas for drinking. Food was lovely and service was top notch. The only thing that was slightly odd was that the dining room that we were in was extremely hot unfortunately for some reason and although the staff opened the window it was still uncomfortably warm, the other diners also mentioned it to the staff so it was not just us having a hot flush and we did leave earlier than perhaps we would of otherwise.
The mermaid inn is a super place to stay or have dinner the food was very very good
This Inn has been lovingly restored and maintained. Thee us so much to find out about it’s history! The management and the the staff are young and friendly the the menu us a bit limited (due to the virus) particularly at lunch time but even then the quality is excellent ! The fish and chips were beautifully cooked and the ploughman’s is very special ! We felt wel one and safe.

We picked the mermaid for dinner as it’s one of the ‘must visit’ places in Rye.
However the room we were seated in had no ambience and was so quiet people seemed not to be talking because of this. Needs low background music. It was also quite stuffy.
Felt the fillet of beef, which was delicious, should have had more accompaniments.
Overall a little disappointing.
The waiter that served us last Thursday afternoon inside (I forgot his name sorry) is brilliant, lovely to talk too and very down to earth, and gave me and my boyfriend recommendations where to visit. Food was outstanding, and inside the pub is beautiful

Very poor menu for restaurant. Service was very slow. So slow we did not opt for our usual sweet and coffee. As a frequent visitor to the Mermaid we were extremely disappointed with this visit.
Restaurant menu was in fact the ‘bar menu’ and has not changed since reopening. Other than the fish and chips everything came in a bun. Not what you would expect from a hotel restaurant
Thank you for your review. At present due to the Covid 19 Restrictions on how we work, we can only offer a limited Dinner Menu and are unable to offer a Lunch Menu. Hence we offer a Bar Menu at Lunch time. The limitations also mean that service is slower as the role is now far more time consuming. We ask that our guests bear with us at this time when staff are having to work such constraints. We too are frustrated.
We had a lovely dinner at the Mermaid Inn the food was delicious and the staff were very attentive.
The hotel is full of character and it had a very relaxing atmosphere.
