Hier wird maximaler Wert auf die Auswahl der Zutaten, Kombination verschiedener Küchentechniken, Neuinterpretationen von alten Gerichten und Intuition allgemein. Es wird viel experimentiert. Der Gast kann sich aussuchen ob er ein 5 oder 7 Gang Menu essen möchte, mit oder ohne Getränkebegleitung. Bei der Getränkebegleitung ist hervorzuheben, dass es nicht nur Weine, sondern auch andere hochwertige Getränke geben wird. So werden wir z.B. in Zusammenarbeit mit der Ratsherrn Brauerei, der Elbgold Kaffeerösterei aus Hamburg, verschiedenen Winzern aus Deutschland und Österreich und anderen Getränkeproduzenten immer eine Sensation auf dem Teller und im Glas bringen. Die Grundidee hierbei ist es, die Aromen die auf dem Teller fehlen im Glas zu ergänzen. Das Memories soll Erinnerungen wecken und den ein oder anderen zum schmunzeln bringen. Der Gast soll hier nicht zum essen kommen, sondern weil er ein Erlebnis haben möchte.

Could well be the best restaurant in Germany. The perfect dining experience in every respect, from the fabulously creative dishes to warm, attentive service and the beautiful view of the Alster. We cannot recommend Haerlin highly enough!

Incredibly sophisticated yet unfussy menu, with the ingredients taking a front seat without unnecessary frippery. Wine pairings were perfect for each course - interesting selections that matched perfectly with the flavour combinations of each course. Incredibly attentive, accommodating and knowledgeable staff… without pretentiousness and with a great sense of humour and relaxed fun. This is without doubt one of the best dining experiences I’ve had anywhere.
